We use basswood (American Linden) as it is the premium material for this application. It is very close to pH neutral, and will not acidify - and therefore deteriorate or discolor - a finished work. As well, it is less prone to warping as it accepts environmental moisture changes more gradually than other species of wood. Moreover, it is a local, abundant, and easily renewable tree which reduces our ecological footprint.
